The Rondolino family produce the world's best carnaroli rice.
Carnaroli has been grown at their Tenuta Colombara farm since 1935. The use of melted water from the Alps and the unique aging process of the grains allows for a more intense flavour than other risotto rice, while retaining a firm texture throughout the cooking process.
The unhulled grains are aged for one year in Colombara’s temperature controlled silos. During this process the proteins in the grains of rice mature giving the rice its unique capacity to absorb more stock. Allowing the rice to breathe optimises its qualities and characteristics. Aging renders the starch, proteins and vitamins less water-soluble, improving the consistency of the grains and enabling them to absorb more cooking liquid. When cooked, the grains become bigger, remain firmer, do not stick together, and have much better flavour.
Acquerello rice is favoured by top chefs such as Heston Blumenthal at The Fat Duck, Alain Ducasse and Paul Bocuse. Certified Organic and Kosher.
